5-Minute Breakfast Burritos

One of the most annoying things about cooking for one's self is that sometimes it can be really hard to use up a whole carton of eggs before they go bad! (It's a universal truth; if you haven't yet had to face it you will one day.) One way I use up eggs when I notice they won't be good for much longer is this delicious Breakfast Burrito. And as I promised yesterday, it's a great way to use up any veggie scraps you have in your fridge. It's easy and inexpensive, and is also great for busy mornings when you have to eat on the go. And, since it only takes 5 minutes to make, no more excuses for skipping breakfast.

You will need...
Cooking spray
Eggs (however many you usually put in your omelets. For me, 1 is fine)
Cheese
Onion
Green pepper
Any other type of veggie you think you'd like (ex. tomato)
Any type of fresh herb you have laying around (I had parsley)
Dried herb of choice (I used basil)
Salt and pepper, to taste
Soft tortilla
Salsa and/or sour cream


1. Spray pan and turn to up to medium heat. While you wait for your pan to heat up, chop whatever veggies you chose to throw in.

2. Break your eggs into a bowl and stir. Be sure to break up the yolk.

3. Add the veggies and herbs to the egg. Mix it all in and add your salt and pepper.

4. Scramble your eggs and vegetable mix. This shouldn't take you very long at all.


5. Once the egg is cooked, take from skillet and put on soft tortilla. Spread it out so it covers the middle of your tortilla. (I cut my tortilla in half because I have HUGE ones and didn't feel like eating a large burrito.)


6. Add cheese and salsa and/or sour cream. Once you've done this, wrap up your breakfast burrito and you're good to go!


Voila. A yummy, fast, and nutritious breakfast. And it doesn't have to be a breakfast. In fact, usually for me it's a lunch or dinner. Either way, it's a sneaky way to eat your vegetables, and y'all know how much I love sneaky veggie eating, haha.
